Recipe Goodies

So on FaceBook I have been requested to start posting some of my recipes! I LOVE to cook and I have a passion for it. I have at different times baked good and other treats to make a little extra cash on the side. At one time while I was pregnant with our 2nd child, I worked from 4am-7am cooking all the baked goods for a restaurant that my husband ran!


I want to allow others to enjoy some of my favorites!
I'll add more as they come :)


Cheese-Itz

1 Cup    Flour
3/4 tsp.  Sea Salt
4 Tbsp.  Butter, COLD
2 Cups. Cheddar Cheese
3 Tbsp.  Water

In the food processor, pulse the flour, salt and butter.
Add the cheese about a 1/2 cup at a time.
Add the water a Tbsp. at a time until it forms a chunky dough, Chill this for at least an hour or 2, or longer.
Roll out the dough until it is about an 1/8in. thick.
Cut in to squares (or any kind of shape) with a pizza or cookie cutter.
BAKE @ 350degrees for about 15min. or until slightly browned on the tops. Start watching them after 12mins. to make sure that they do not burn.

Qunioa (Keen-wa) Patties

2 1/2 Cups  Cooked Quinoa
4lrg             Eggs, beaten
1/2tsp.        Sea Salt
2/3 Cups     Fresh chives, chopped
1                 Yellow Onion, chopped finely
1/3 Cup       Fresh Parmesan, grated
6                 Cloves of Garlic, minced
1 Cup         Whole Grain Bread Crumbs
1Tbsp.        Virgin Olive Oil

In a medium bowl combine cooked quinoa, eggs and salt. Stir in garlic, chives, onion and cheese. Add breadcrumbs and allow to sit fr a couple of minutes.
Form into 1 inch patties. The mixture should be very moist. You may need to add water or extra breadcrumbs to moisten or make the mixture dryer.
Place a large skillet over medium low heat. Heat olive oil. Add as many patties as your skillet can handle, being careful not to overload it so that you have trouble flipping the quinoa patties.
Cover and cook for 8-10 minutes. If after 10 minutes your patties aren't brown, turn the heat up and cook (carefully to avoid burning) until they are brown. Flip and cook for 7 more minutes on the other side.
Allow to cool on a wire rack, keeping your spatula handy to fend off family members who try to steal them!
